Chicken and Black Bean Enchilada Casserole

Once the school year starts our family is running from one event, practice, or game to another after school. It seems like I am always relying on the slow cooker or casseroles to get dinner on the table. This Chicken and Black Bean Enchilada Casserole is one of our favorite dinners. The best part is that you can make 2 and freeze one for later to save even more time.

The Story of our RV continued

I can’t believe it’s been 3 years since the last RV update. Things have been delayed and put on hold many times due to job losses and moving but we are finally starting to work on it again. It’s really an interesting story how everything got started so if you’d like to read about it here are the links: RV part 1, RV cabinets, RV walls. The Story of our RV continued …

Using Stickers to Label Dorm Room Food

Here’s a quick tip we started a few years ago when our older daughter was in college. When you share a dorm room with 4 other girls and you have a limited budget and space it’s important to label what’s yours. We decided using stickers to label dorm room food would be the easiest way to know whose food it is. I’m sure they will be sharing some of their food especially if they are sharing a dinner or breakfast together, but for the most part it’s kept separate.

Dorm Room Decorating and Organizing

We just took our daughter to college and helped her move into her dorm last weekend. It was definitely bittersweet. We miss her so much already and know there are times when she will probably be homesick. So decorating and organizing her room is more than just a process that needed to be done, it is a way to help her feel comfortable and happy away from home. I’m sharing Dorm Room Decorating and Organizing ideas we used in her dorm room to make that tiny space comfortable and her own. Warning: lots of photos ahead. I hope you’ll get some great ideas. The list of dorm room essentials is in another post.

I love decorating the walls in my home but since I’m renting and have a strict landlord, I have to find ways to do it without damaging them in any way. I love that you can add personality to your home with Vinyl Wall Decals without damaging the walls or any other surfaces. Here are a couple of my favorite ways to use vinyl on different surfaces.

This is a sponsored post written by me on behalf of Hillshire Farm®, Jimmy Dean®, Ball Park®; Tyson® Foods. All ideas, recipes, and opinions are entirely my own.

I don’t know how it is at your house but once school starts here it’s a whirlwind of activity from Monday through Friday. Once the kids get home from school there’s homework, instrument practice, sports, church activities, and hopefully they can fit in a little play time. I appreciate quick and nutritious snacks and meals. These Back to School Lunch and Dinner Ideas are the answer to busy evenings, plus the kids will love them.

Kitchen Cup Organizer

Most of my organizing ideas come out of necessity and many times frustration. I made this Kitchen Cup Organizer a few years ago and we still use it everyday. It has been a lifesaver from having a sink full of cups, especially in the Summer. It doesn’t matter how many kids you have, it seems like each kid goes through at least 4 cups in one day.

Pencil and Cork Wreath

I like changing my front door with the seasons or holidays but it’s always been a little difficult for me to think of fun ways to decorate for Back to School. I made this Pencil and Cork Wreath a few years ago and love pulling it out every year. Nothing says back to school like a bunch of pencils, right?

3 Ingredient No Churn Ice Cream

This is a sponsored conversation written by me on behalf of Wet Ones® Hand Wipes. The opinions and texts are all mine.

At the beginning of every Summer we make a Summer Fun List so we don’t forget anything new we want to try or any new adventures we want to go on. One of the things on our list this Summer was to make homemade ice cream. We don’t have an ice cream maker so we decided to try our hand at making no churn ice cream. This 3 Ingredient No Churn Ice Cream is so easy to make. The hardest part is waiting the 6 hours until it freezes.

Sweet Pickled Radishes

Canning always takes me back to thoughts of my childhood. It starts with picking strawberries, beans or other produce from the garden and continues in the kitchen with my mom canning our harvest. They’re such sweet memories. There’s something about canning and preserving your own food that makes it taste better, actually it does taste better because it’s fresh. I received the new Ball Book of Canning and Preserving and just had to try canning the Sweet Pickled Radishes. They taste even better than I though they would.
