Pumpkin Bars

I have a new favorite dessert recipe. Hubby loves it too but has a request for me not to make it too often, because it definitely is not a diet food. I got the recipe from a friend to make it for a church activity. Oh, it’s so yummy and the frosting is heavenly.  Sorry about the picture, I forgot to take one earlier and this was taken at the church.

Pumpkin Bars

1 can pumpkin

4 eggs

1 cup oil

1  2/3 cups sugar 

2 cups flour

1 teaspoon soda

1 teaspoon salt

2 teaspoons cinnamon

2 teaspoons baking powder

Whip pumpkin, eggs, oil and sugar. Stir in remaining ingredients. Pour into greased, large cookie sheet with sides. Bake at 350 for about 25 minutes. Let cool and frost.

Cream Cheese Frosting

1/2 cup butter

3 oz cream cheese

2 cups powdered sugar

1 teaspoon vanilla

Beat with mixer until of spreading consistency.

    Leanne! Ok I thought before that we were too “alike” but then you come up with this and now I know it. I got this recipie years ago and it has become a fall favorite around our house. The frosting even finds it way to cakes too! I love the way it is thin enough to spread and gets all drippy, extra for the crumbs at the end.
    I found a yummy looking cake one to try and I’ll post it soon on my blog.
