I don’t have a very good picture of the salad, it’s the one in the top left. This was at our Luau last year. We call it Amy’s Salad because Whitney’s old gymnastics coach brought it to the gym one day and let us all try it. Umm, her name is Amy. We didn’t remember the name of the salad, so we just call it Amy’s Salad.
I made this for a family gathering about 7 years ago and now everyone asks me to bring it everytime we get together. It’s fast, easy and yummy!
1 box Bow-tie Pasta
2 cans Sweet Corn
2 cans Black Beans
2 pkgs. Grape Tomatoes
1/2 cup Red Wine Vinegar
1/2 cup Vegetable Oil
1 pkg. Fiesta Ranch Dressing
Cooked Chicken (optional)
Cook pasta as directed. Drain and cool pasta. Add drained corn and beans. Mix together. Add tomatoes and mix. In a separate bowl, mix dressing, vegetable oil and vinegar together. Add to the pasta and mix together. Refrigerate for at least a few hours. It tastes better cold. Mix again before serving!
So Good! A favorite at every picnic and barbecue.
Yummy, can’t wait to try it and I will rename it Leanne’s salad. We camp alot during the summer and love to have things we can make ahead or eat out of one dish and this is a perfect addition to our line up. Thanks for sharing

This sounds really good–but I’m not sure what Fiesta Ranch dressing is. Is that a Hidden Valley Ranch product? I’ll have to look for it, because this recipe sounds yummy!
