I made this for dinner when I hosted Bunco at my house last month. Let me just say it was yum-tastic! It serves about 20-24 people (maybe more). I put way too much on my plate and couldn’t eat it all.
The Pork Ingredients:
About a 2 1/2lb Boneless Pork Roast
1 1/2 Cups Brown Sugar
2 Cups Chunky Salsa (mild, medium, or hot)
Combine the brown sugar and salsa in a crock pot. Add the pork roast and spoon some of the sauce over the roast. Cook on low for 6 hours or until tender, spoon the sauce over the roast several times while cooking. Take the roast out, shred it with 2 forks, then mix it back into the sauce to simmer for 1-2 more hours. I added 1/2 cup brown sugar and 1 cup salsa more to the sauce after I shredded the pork. You want it to be juicy.
Cilantro Lime Dressing: (I doubled the dressing recipe so we’d have extra dressing)
1 Buttermilk Ranch Dressing Packet
1/2 Cup Buttermilk (I don’t use buttermilk so I substituted 1 Tbsp Vinegar and the rest of the 1/2 with milk)
1/2 Cup Sour Cream
Garlic Powder equivalent to 1 Clove of Garlic
Juice of 1 Lime (roll lime before cutting)
1/2 Cup Chopped Cilantro
1 Cup Green Salsa
Combine all the ingredients in a blender and puree it until it’s the consistency of thick salad dressing.
Layering the Salad:
Layer in this order if you want it to taste and look like you bought it from Costa Vida or Cafe Rio.
1st– Fried Tortilla on the bottom
2nd-Long Grain Rice and Black Beans
3rd– Sweet Pork
4th– Lettuce
5th– Pico De Gallo
6th– Guacamole
7th– Crunchy Tortilla Strips (you can buy a bag of them from Costa Vida or Cafe Rio)
8th– Grated Parmesan Cheese
9th– Cilantro Lime Dressing
You will not be disappointed with this recipe. It tastes just like the real thing (and it’s cheaper).
