One of my goals this year was to cook more often. I love baking but not cooking, so much. So far I’ve been doing pretty good accomplishing my cooking goal. The Summer makes it a little harder because it’s so hot and I just don’t want to cook, so I try preparing meals that are on the lighter side but still filling. I like to add lots of fruits and vegetables if possible too. This is one of my favorite meals.
Ingredients:
2 cans cream of chicken soup
1 cup chicken broth
2 cup diced cooked chicken
4 cups cooked rice
1 can chow mein noodles
3 medium tomatoes, chopped
1 cup celery
1/2 up chopped green onions
1 can pineapple chunks, drained
1 can mandarin oranges, drained
1/2 cup slivered almonds
1/2 cup coconut
Combine soup and chicken broth in a saucepan to make gravy, stir to blend.
Add cooked chicken and simmer for about 10 minutes until heated through.
Cut up toppings (or pour them out of a can).
This part is the easiest, let everyone serve themselves.
Layer ingredients in this order: rice, chicken and gravy, then top with as many other ingredients as you like.
Quick and easy! And I love how colorful it is.
We love Hawaiian Haystacks! In fact, that was what we had for Sunday dinner this week! I need to remember about mandarin oranges. I’m always looking for new and interesting things to put on it. 🙂
