Gluten Free Blonde Brownies

I don’t know how this happened but up until the age of 27 I had never heard of Blonde Brownies. Our young family had moved to Florida from Maryland and I had already lived in Indiana, Utah and California but not in one of those states did I ever taste a blonde brownie until living in Florida. Why were people hiding this delicious dessert from me? Luckily I met a friend who was willing to show me what I had been missing.

Gluten Free Blonde Brownies

We were invited over to their house for a barbecue and she made Blonde Brownies for dessert. I immediately asked her for the recipe and it quickly became a family favorite. Years later when I was diagnosed with Celiac Disease I modified her recipe a bit so I could still enjoy it.

Here are the ingredients:
2 sticks of butter, softened
1 1/4 c brown sugar
1/2 c granulated sugar
3 eggs
2 tsp vanilla
2 1/4 c gluten free flour
1 1/2 tsp baking powder
1 tsp salt
1 tsp xanthan gum

Preheat oven to 325 degrees. Grease 9×13 pan.

In large bowl combine butter and both sugars. I have found that partially melted butter makes the best texture. Cream together until light and fluffy (about 4 minutes). Add eggs and vanilla. Beat until smooth.

Mix flour, baking powder, salt and xanthan gum together. Gradually pour in flour mixture on low speed until combined.

Spread dough in pan. Bake for 30-35 minutes until edges are golden brown and the bar is set in the center. Don’t over bake.

Place on baking rack to cool completely. Cut and Serve!

The texture of these are perfect. The outside is a bit crispy and the inside is a bit gooey. Serve with milk or if you want a really decadent dessert top with ice cream, caramel sauce and sprinkle with nuts.

*To make this recipe into a regular Blonde Brownies omit the xanthan gum and use regular flour.
