I got this recipe from my daughter, Whitney. She knows how much I love anything lemon. I can eat a whole bag of Lemon Heads and don’t even care that my tongue is raw. You know when you get one that’s more sour than the others? I love that!
This is all you need:
1 box angel food cake mix
2 cans lemon pie filling (the recipe originally called for only 1 can)
Mix dry cake mix and cans of pie filling together in large bowl.
Pour into greased 9 x 13″ baking pan.
Bake at 350 degrees for 25 minutes or until top is starting to brown.
Cool on wire rack and sprinkle with powered sugar. It has a spongy texture.
Yum!

I know what you mean about lemon. When I make lemon meringue pie it has to be as tart as I can get it. Everyone seems to make them really sweet with a hint of lemon. I will definatly be trying this recipe

YUM!!! Saw your recipe and went shopping that night! Made them this morning and YUM-O!!! My mother has always made lemon pies for family gatherings. I love lemons, but just never ate her pie until last year (38 years old I am!!!). Fell in love, but her pies are way too complicated to make. I think I found the next best thing. Thanks for sharing and this will be on our Easter table tomorrow….if it lasts that long!

I didn’t have 2 cans of lemon filling. So I used 1 lemon and 1 cherry. I just took it out of the oven. It is very spongy & cake-like. Maybe after it cools it will “drop”. Next time I will definitely use a jellyroll pan.
I used:
1 – 1 pound, box Angel food Cake mix
1 – 21 oz. can of Lemon pie filling
1 – 21 oz. can of Cherry pie filling
So, I followed the directions to the “T”. I use an oven thermometer so I know my oven temp was correct. However, the bars overflowed the pan and the center did not bake all the way through. Suggestions?
