I prepared a lesson on nutrition for the Activity Day girls today, then helped them make one of my favorite salads.
This is what you’ll need:
8 ounce package medium shells
8 ounce plain lowfat yogurt
1/4 cup frozen concentrate orange juice
15 ounce pineapple chunks, drained
1 can mandarin oranges, drained
1 cup seedless red grapes, halved
1 cup seedless green grapes, halved
1 apple, cored and chopped
1 banana, sliced
Cook pasta shells as directed on package. Drain and set aside.
In a small bowl blend yogurt and orange juice.
Chop the fruit.
Or have your helpers do it.
Aren’t my helpers cute?!
Mix all the fruit together in a large bowl.
Then add drained shells.
And yogurt mixture.
That’s it! Refrigerate, then toss before serving.
It was a hit with the girls. My family loves it too. Yum!

This sounds interesting. I don’t think I have ever heard of pasta in a fruit salad? I love fruit and yogurt together, so I will have to try it this way too!
