Chicken Roll-Ups

One of my New Year Resolutions was to cook more dinners and give hubby a break. He’s been the cook in our family most of our married years and he deserves some time off. Most of my family really likes this easy, yummy recipe, but I can never please all of them. One of them would rather have peanut butter sandwiches every meal.

Start by boiling 3-4 chicken breasts then cut into small pieces. I use my kitchen scissors.

Mix together 1 8-oz. package of cream cheese, 2 medium green onions, and 1 small can of chopped mushrooms (optional). Add about 1 teaspoon of milk to make the mixture moist.

Add the chicken pieces into the cream cheese mixture and mix together. Unroll the crescent rolls and add a spoonful of mixture to the center of each roll. This mixture will fill 3 cans of refrigerated crescent rolls.

Roll crescent and pinch sides together.

Dip rolls in butter then roll in bread crumbs. You can also use crushed croutons or stuffing mix.

Place on baking stone or pan and bake at 350 degrees for 35 minutes.

You can make gravy or do what I do and warm it up from a jar.

Remove roll-ups from oven and serve with gravy over top. YUM!

    My kids love these! I don’t put mushrooms in and I use chives rather than green onions, but other than that they are similar. I make a huge batch and freeze them separately on a cookie sheet. Then I keep them in a Ziploc bag. They are yummy with mashed potatoes!
