Sweet Potato Chips

I’ve completed one week of my restrictive diet and still have 2 weeks to go.
I’ve had a few e-mails wondering what I’ve been eating besides raw fruit, vegetables and nuts.
So I’ll post a few of the recipes here. I love this one and it’s simple.

Peel sweet potatoes and slice into 1/8-1/4 inch rounds.
Spread evenly on a rimmed baking sheet.
Spread olive oil on each side using a pastry brush.

Add a sprinkle of salt to one side.

Bake at 375 for 25 minutes (or until desired crispness).
They would be delicious with a sauce, but I can’t have sauce right now and they are still yummy.

    I too want to know what diet this is for. I was recently diagnosed with PCOS and have to cut potatoes out of my diet. I am allowed to have sweet potatoes, though, and making my own chips would be great. I do have a couple other questions also: How sweet are these? I’m learning to like sweet potatoes as a salty alternative, but can’t quite get past the sweetness of a sweet potato (duh). How quickly did these lose their crispness? I assume thinner slicing would produce a crispier chip; any particular motivation for the thickness chosen? (I’m still learning about cooking, even though I’m nearly 27, heh.) I also noticed these are the white sweet potatoes. Have you tried this with the orange variety, sometimes (incorrectly) termed yams?
