3 Quick and Easy Summer Treats

My husband is only home 2-5 days a month which leaves me in charge of the kids and home most of the time. Carving out a little “Me Time” can be difficult, but with Summer here I am determined to find some time just for me. I would love to take a tropical vacation and escape from it all if only for a day or two but being realistic means taking some time to look through my favorite magazines might be the only escape I get. I found some alone time and drove to Target to pick up PEOPLE StyleWatch® and InStyle® magazines for a mini escape. But what would a little escape be without a little indulgence? I am sharing my favorite 3 Quick and Easy Summer Treats to snack on while enjoying a little “Me Time”.

We as women spend so much time taking care of others that we deserve to take a little time for ourselves. Magazines have always been a guilty pleasure of mine. I’m not a fashionista by any means but I like to look my best and I love trying new things. Seeing the newest trends for the season in PEOPLE StyleWatch® and InStyle® magazines gives me the courage and motivation I need to try something new, even if it’s only a nail polish color or a new bag.

While the kids swim or have their reading time I don’t feel guilty reading through my magazines. I head to the patio, bring my sunglasses and my favorite music, and I’m set for some “Me Time”. The only thing that’s missing is a delicious treat and if the kids are lucky I’ll share with them.

These Frozen Banana Bites are so simple to make and they’re actually good for you.

Ingredients:

4-5 Bananas
1 bag chocolate chips (I used dairy, soy, gluten free chips)
2 tablespoons coconut oil

Cut each banana into about 10 slices. Place on wax paper on a cookie sheet and freeze for about 1 1/2 hours. Place the chocolate chips in a microwave safe bowl and add the coconut oil. Heat on high for 30 seconds, stir and heat for an additional 15 seconds. Stir again and heat 15 seconds at a time until chips are completely melted. Let cool to almost room temperature. Take the frozen banana pieces from the freezer about 10 at a time so they don’t get too thawed and dip in the chocolate, cover completely. I use a toothpick to dip the bananas, let the excess chocolate drip off the return the chocolate covered banana to the freezer. These are so delicious and the kids even like them better than ice cream bites.

Try this simple Pineapple Whip for another refreshing, healthy treat.

Ingredients:

7 cups Frozen Pineapple (approximately 2 bags)
1 cup lite canned coconut milk
1 tablespoon honey

Combine all the ingredients in a high speed blender. I made half the recipe at a time since my blender is not as large as some. I also let the pineapple thaw slightly, but not too much, so it wasn’t so hard on my blender. You want the consistency of a thick sorbet. For a soft serve appearance I filled a large zip lock bag with the the treat, cut off the corner of the bag and piped it into 5 cups. This is so refreshing and perfect for a hot Summer day.

This Key Lime Dip is not healthy at all, but amazingly delicious.

Ingredients:

1/2 cup Key Lime juice
1 can Sweetened Condensed milk

This is so simple I’m not sure is qualifies as a recipe but here we go. Whisk together the sweetened condensed milk and key lime juice. That’s it. It is so thick and creamy and tastes just like a Key Lime Pie especially if you dip graham crackers. You can also dip vanilla wafers, vanilla sandwich cookies, or fruit if you want to pretend it’s healthy.

I have a teen daughter and I don’t mind sharing a little of my “Me Time” if it helps us bond. We like to share what trends we like and see what the celebrities are wearing.
